Green beans salad with chicken and hazelnuts

Ingredients / 4 Persons

  • Green beans (fresh or frozen): 1,5lb / 750 gr
  • Chicken breast
  • Clove garlic: 1
  • Bay leaf: 1
  • Fresh coriander sprigs: 1
  • Salt and Pepper
  • Olive oil: 1 tablespoon
  • Hazelnut oil: 1 tablespoon
  • Apple vinegar: 1 tablespoon
  • Chopped hazelnuts: 2 tablespoon

 

 

Method:

Cook the green beans « al dente » in boiling salted water,

topped with a clove of garlic and a bay leaf + a few grains of black pepper.

Drain, let cool. Cut the chicken breast into cubes.

Chop 2 tbsp. of hazelnuts.

Put everything in a bowl, sprinkle with a vinaigrette: 1 tbsp. olive oil, 1 hazelnut oil, 1 apple vinegar (if not balsamic), salt, pepper.

Serve sprinkled with coriander leaves.
